Eid is a happy and holy occasion for all Muslims and followers of ISLAM.
In Eid Al fitr you sacrifice an animal as an act after following the Prophet Abraham.
The story goes, That Prophet Abraham saw a dream, in which he was commanded to sacrifice something very precious to him in the name of thy LORD.
The only thing he had that was so precious to him was his son. Prophet Abraham conveyed the message to his son Ismahel.
Isamhel said: Dad do as you are commanded by thy Lord, you will find me patient.
So, Abraham took a knife and his son to a nearby mountain and a blind fold on his son’s request.

On the way Satan crossed paths with Abraham, and said: what are you doing? Abraham picked up 7 stones and pelted satan with those 7 stones.
GOD liked it so much, that this act forms a part of the Hajj/Pilgrimage, so every muslim has to stone the devil as an act of Abraham.

Abraham found a quiet spot, where he could sacrifice his son, as he went to cut the neck of his son.
Suddenly a voice came to Abraham, STOP, "you have done as you were told, sacrifice this lamb instead."
So that was the reason  why we sacrifice or cut an animal in Eid al fitr.
This act also forms part of the pilgrimage, to sacrifice an animal in the name of the LORD as an act of Abraham. He was given the title by GOD, “a friend.”
